This morning I came up with a very filling and delicious bowl of oatmeal. It started off with my mixing a portion of slowcooked steel cut oats with extra unsweetened vanilla almond breeze, then adding the creamy mixture to All Bran cereal and (hiding) chia seeds, and topping the whole thing with chopped almonds and dried cranberries. Multiple steps, but it was worth it.
And since there were no nut butters involved, everything got all mixed up.
For lunch I munched my way through a crisp, flavourful salad. On a bed of spinach is carrot, cucumber, yellow and orange peppers, avocado, grape tomatoes, and lemon juice. Along with a turkey sausage I found in the freezer on a quest for protein.
Later in the afternoon I had finished off a sweet container of fruit, strawberries, mango and green grapes.
I was hungry for dinner when I got home so I started some artichokes on the stove steaming away, and threw together some quick lettuce wraps.
Wrapped in romaine lettuce is a mixture containing the last of the lentils and yves italian veggie ground round, with a bit of yogurt and Big Bull steak sauce. I also ate the last hunk of my organic Emmental Cheese. The fridge is starting to look empty again, oh no!
After I ate my wraps I starting in on the delicious artichokes. It seems like all my meals had creamy elements today, the oatmeal, avocado, and artichokes…but I’m not complaining, they were all delicious. I dipped the leaves in a mixtue of tahini and lemon juice with a bit of salt, my favourite artichoke accompaniment.
I don’t think I’ll be hungry for dessert tonight, but some time in the future I definitely wouldn’t refuse the amazing chocolate cake or maple syrup Ricki’s giving away over at the new Diet, Dessert and Dogs. Or for that matter, a chance to try a Dempster’s Fresh Square for free with a coupon from Krista at Krista’s Kravings! It looks like today is a good day to be living in Toronto….

Your eats look wonderful!!! I haven’t had artichokes cooked like that in ages! My Mom used to steam them and then we’d dip the leaves in an oil & vinegar dressing. Ah, the memories!!!
