Breakfast this morning was a pile of orange pepper strips and a plum with some almonds that I had soaked and peeled. I had planned to make almond milk with the rest of the almonds, but they ended up finding another home. Although, that’s a story for next week 🙂
For lunch I brought out the food processor and chopped up some cauliflower and snow peas, mixed them with Ted Reader’s Peach Bourbon BBQ sauce, and topped the bowl with raisins and sunflower seeds. I loved the spicy BBQ sauce with the sweet raisins, it made for quite the lovely dish.
Mid afternoon I snacked on some dates and prunes. My roomie was eating some prunes last week, and I nabbed one and remembered just how good they are, so I was quite happy to buy some of my own yesterday.
For dinner I broke out the mandoline and sliced up some jicama to make wraps stuffed with pesto, beet greens, and raw, freshly shelled peas. The pesto was rather amazing! I’m usually not a fan of basil, especially if it’s with tomato (weird, huh?), but I do like pesto. So when I got a big bag of it from the CSA I knew some homemade pesto action was in my future. I used the whole bag (4oz) of mixed green and purple basil (which made the pesto kinda brown, but I’m okay with that) with ~1/2 cup walnuts, 2 T olive oil, 2 T lemon juice, 3T nutritional yeast, and maybe 1/8 t salt. And now I have a whole jar if it to enjoy 😀
Then for dessert I continued to use both my blender and food processor. First, I was planning on simply grinding most of my cacao nibs into cocoa powder in the Vitamix to make for easier mixing in future applications. What I didn’t realize, was that instead of becoming a powder, the nibs turned into cacao butter! Way better that I expected! So scooped out the butter as best I could into an empty nut butter jar, but there was still lots stuck to the sides of the blender. So I threw in a big handful of dates, a squirt of agave, and some water. The result was delicious raw chocolate paste. And I used a spoonful of that paste on top of a mini martini glass filled with banana soft serve (food processor again). Best dessert ever! I’ve had banana soft serve many times before,but the chocolate paste mixed easily into the banana and brought the dish to a whole other level.
But I was still a little hungry so I finished of a little bag of brazil nuts I found floating around on the shelf.
