Goopy Sludge and Recognition June 10, 2009

Let’s try and make this quick, I’ve got some SYTYCD waiting for me 🙂

Goopy sludge # 1 of the day, green brown monster.  On the fruit side I chose banana, peach, and frozen raspberries.  And since I knew the raspberries would muddle the monster anyways, the green side was covered by leftover beet greens that had been hidden in the fridge and almost forgotten about, plus a little spinach, and chia seeds.  1/2 cup of cooked greens looks so small but packs a lot of punch!

My late morning snack consisted of a Chocolate Chip Peanut Crunch Clif bar.  It was good, very cookie like, the peanuts were a nice addition without being in-your-face peanutty like the peanut butter flavour.  I would have been even happier with more chocolate chips though.

I was weird and swapped lunch and afternoon snack in the timing scheme of things since the clif bar did a good job of filling me up.  At lunch time I had a container of honeydew and blueberries.

Then later in the afternoon I dipped my way through goopy sludge #2 of the day.  I food processor-ized black beans, chili paste, PB2, lime juice, soy sauce, and a bit of water for a tasty spread.

And the dippers were carrot, cucumber, zucchini, and celery.

For dinner I started off with more honeydew (it’s a big melon, and really tasty!) and kiwi while I was waiting on the oven.

Then I had a fantastic serving of freshly baked kabocha, to which I added soy sauce when I got down to the  outer skin layer in order to make it super fabulous.

And along side that was amaranth pilaf.  I found amaranth a while ago from the bulk bins, and finally decided to cook it up with onion, parsley and thyme that got caramellized first before adding the grains and water.  They’re so cute and tiny!  And the pilaf had a fun chewy texture.  Although there was a slight bitter taste, so I think I was supposed to rinse the amaranth first, like you would quinoa.  At least I know for next time, and it was still pretty good.

And the recognition part of the day.  Every day I wake up and  look out my window to see a large billbord that is usually adorned with an advertisement for some CTV show.  Last year I wanted to ripe my eyes out a little bit after waking to Addison Sheppard for four months.  For the past few (3?) months the billboard has been bugging me because I didn’t know what show it was advertising.  I figure the title was hidden somehow in the gibberish behind the guy’s head but I could never pick it out.  This morning I was looking at the gibberish again and had a feeling I had seen it somewhere else recently.  I suddenly came to the realization that the advertisment is for The Listener!  Now I’m wondering why the sign has been up for months when the show only started airing last week (although apparently NBC aired it in March)…

Free fruit (and chocolate)! April 27, 2009

This morning started off with a relaxing breakfast enjoyed almost-outside, a hard boiled egg and a plateful of my BSI Morning Glory Bread. While rearranging my room yesterday I put a rocking sofa chair (is there a word for that?) beside the window, right where the breeze hits when I open my window the whole two inches wide. And I’ve discovered it makes a lovely little spot to look out (mostly at the sky) and enjoy a meal with some fresh air.

For lunch I packed up the leftover balsamic asparagus and some orange dill Lake Erie striped bass from last night along with green pepper strips.

As well as Liberty plain non-fat yogurt with Dorset fruits, nuts, and seeds cereal.

And for snacks I had packed some strawberries and pineapple. But I didn’t eat them. But I’m including the picture to replace the fact I have no picture of what I did eat. Namely a little plate of mixed melon, kiwi, and blueberries, and a piece of a brownie. The fruit was leftover from a lunch meeting. And the brownies (as well as lemon squares) were brought in by my cubicle-mate for her birthday. And I knew they were from My Market Bakery in Kensington Market, so I has to try a piece, and as I suspected, it was amazingly delicious (with cherries on top!).

For dinner I made use of some items I found lurking in the cupboard.  I made some sushi-esque wraps, both filled with orange pepper and asparagus edamummus, one wrap with only nori, and the other with both nori and rice paper.   They were some pretty tasty bites, I was pleased.

Then I blended up the strawberries and pineapple I brought to work with ice and Celestial Seasonings Peach White tea to make a sweet smoothie.  Of which I only drank about half because it was too sweet for me…maybe I should have added greens…

Then for dessert I had a different kind of sweet, a couple of parnoosh dates mixed with 2 T of dried coconut.  I’ve never had a coconut cream pie larabar (and don’t those have almonds too?) but this sure was good.

Now I think I’m going to mix up a breakfast cookie for tomorrow. Though I sure do wish I could make it using the peanut butter and protein powder I could win in Nicole’s 100th post giveaway over at Just Sweet Enough!

And another note, Marianne commented that she had never heard of poor man’s pie, which got me to googleing, and I couldn’t find ANYTHING about my version.  I found a bunch of recipes for what looks suspiciously like a pie-sized butter tart, and some bread pudding in a pie crust, but no mention of a simple slice of bread spread with butter and molasses.  Which just seems odd to me because that’s what my dad would always call it (and he often used corn syrup too, especially for us kids who didn’t like molasses so much by itself).  And I assume he got it from my grandma, who grew up in Alabama.  So maybe it’s a southern thing?  A southern thing that hasn’t managed to make its way to the internet yet?  Will I become famous for bringing it to light? 😉

I think Mother Nature decided to take my request for below zero weather a little too seriously. Definitely not spring-like today…

Before venturing out in the cold this morning I had an awesome yogurty breakfast. In the bowl is strained plain yogurt, hiding applesauce, the last of the ground flaxseed, and a serving of Stephano’s Bakery Deluxe granola (that I had to take out of Biz’s BSI prize to reduce the package weight a little). I’m loving the strained yogurt, I picked up an actual large strainer a couple of weeks ago so I can do a whole container of yogurt at once, instead of one serving at a time in my tea strainer. And a full 24 hour strain is so worth the wait.

For lunch I had a piece of baked basa fish along with a pile of carrot, red pepper, and cucumber. I’ve got a really good 5lb bag of carrots in the fridge, and they need to be eaten so they stop taking up so much space!

In the afternoon I snacked on some sweet kiwi and strawberries, and just before coming home I worked my way through the other half of the Nutty Banana Boom Probar. I like how each bite of the Probar has something different in it. And the grain sweetened dark chocolate chips are really good, they’re soft instead of hard. Has anyone seen this kind of chocolate for sale anywhere before? The ingredients of the chocolate chips are whole grain malted barley and corn, cocoa powder, soy lecithin, and pure natural vanilla.

For dinner I was inspired after seeing Vegan Dad’s post this morning and fixed up a wonderful mustard coated spread. I defrosted some frozen precooked baby potatoes in the microwave, then tossed them in a mix of stone ground mustard, whole grain dijon and soy milk along with some fresh asparagus. The potatoes and asparagus got a quick roast in the oven while I sauteed the last of my frozen shrimp in a pan with a little sesame oil and a few cloves of roasted garlic. I cleaned out the mustard bowl with chopped red and orange peppers and snow peas, then plated everything up and enjoyed 🙂

My Lucky Day April 2, 2009

I got an awesome surprise today when I found out I won the cake giveaway over at Diet, Desserts and Dogs. So expect to see some chocolatey goodness here in the near future. Thank you Ricki!

My breakfast was a happy accident discovery. I’ve been wanting to try out blended oats, but me roomie is always asleep when I get up and have breakfast in the morning. So I figured I would try blending the oats at night, then microwaving the mix in the morning. I also had the rest of the tofu left over from last night’s scramble. So into the bowl went 1/4 cup rolled oats, 200 g soft tofu, ~1/4 cup of almond breeze, and a stick blender. Then I was smart enough to taste it before sticking it in the fridge. I discovered a lovely vanilla pudding texture/flavour with a bit of tofu aftertaste I wasn’t entirely happy with. So I blended in a small banana and created a deliciously creamy, no-cook, vegan banana pudding! I think it’s even more instant than pudding mixes because you don’t have to wait for it to set.

This morning I added some walnuts and dried cranberries and feasted. I was a bit amused at the colouring though. Since it spent the night (covered) in the fridge, the banana caused the top couple of millimeters of pudding to oxidize brown, but it still tasted the same, and the texture was the same as when I first blended it, so refrigeration is definitely not necessary.

My lunch at work was a container full of veggies and a seitan sausage. There was celery, carrot, red and yellow pepper, and cucumber.

And in the afternoon I snacked on fruit, lots of it, I needed two containers to hold it all. There was a pear, a mandora tangerine (horribly sour, I didn’t finish it), kiwi, blackberries, and tuscan melon.

And on the way home I munched on the rest of the Cocoa Coconut Cluster Elevate Me! bar, without taking a picture of it.

For dinner I fixed up an enormous salad filled with an entire romaine heart, zucchini, and red bell pepper.  I also seared the last seitan burger (there’s still 1 sausage) in a pan with olive oil, then added the juice from the other sour tangerine, and let it reduce to use as salad dressing.  Delicious.

And dessert was a handful of walnuts, pecans, cashews, and maple almonds.  Now I’m going to relax with the new Clean Eating that showed up in the mail box.  A lucky day indeed.

Happy April Fool’s Day! April 1, 2009

Anything funny happen to anyone?  My work was boring, nobody even mentioned playing any tricks.  Oh well.  My cubicle-mate said that all the light bulbs in her boyfriend’s office had been switched to red.

However, it seems as though WordPress played a joke on me a bit early yesterday.  I could have sworn I hit publish on yesterday’s post.  In fact, I must have because I submitted the post to Foodbuzz.  But when I just went to edit this post (I started writing it at work), yesterday’s showed up as a draft too.  And I went to my blog and yesterday’s post was gone!  Weird.  But fixed now, I hope.  On to other business.

Breakfast was a mashed banana topped with some Allbran cereal, unsweetened vanilla almond breeze, raisins, pumpkin seeds, and maple glazed almonds.  Those are some good almonds.

I packed up a pile of fruits and veggies for snacks/lunch.  There’s a grapefruit, red delicious apple, tuscan melon (looks and tastes like cantaloupe on the inside, has stripes on the outside), kiwi, carrot, celery, steamed broccoli, and roasted chicken breast.  Basically, an abundance of delicious nibbles.

In the afternoon I also tried a Ruth’s Tropical Fruit Flax Power bar.  It was interesting, very seedy.  It was good but it didn’t have much of a tropical flavour, more just a light sweetness.  It wasn’t too sweet or too hard, and I quite liked the texture.  Although you really need to check your teeth when you’re done with it.  I’m glad I tried it, and it was perfectly edible, but I probably wouldn’t buy it again if I had the choice to try a different flavour instead.

When I got home I snacked on a few algerian dates and a square of a Cocoa Coconut Cluster Elevate Me! bar.  This flavour is my favourite Elevate Me! flavour.  It has an awesome chocolatey flavour that matches perfectly with the fruit in it.  Who ever wins this week’s BSI: Avocado (for which I am eagarly awaiting entries) should expect to get one of these in their prize pack.

For dinner I fixed a tofu scramble with a punch of flavour.  In the mix is mushrooms, jo tsai (no, I don’t know if that’s the actual ping ying), and soft tofu sauteed in sesame oil and a little soy sauce with red pepper for colour.  I love jo tsai, which I see tends to be called garlic chives in english.  My parents have always had a ton of it in the garden, and every summer my mom uses it in fillings for various chinese dumplings , pockets, and dishes (none of which I know the english names for).  It has an awesome garlic/onion flavour but better.  I bought mine in Chinatown (it’s way too early for it to be up in the garden around here), and big bunch was 75 cents.  My roomie was jealous of how awesome my dinner smelled as I was cooking it.

Herbs and Spices March 28, 2009

This morning I was faced with a pitiful offering from the fridge and pantry.  I wasn’t really feeling oats so my first breakfast was simply the remaining pepper pieces, some carrot, and the rest of the Peanut Toffee Buzz Clif bar.

After that I started running some errands and came home for second breakfast.  Strawberries, strained plain yogurt, and Cranberry Blueberry Granola.  There was also some unpictured sampling of nuts at the health store, I bought the maple glazed almonds, yum.

Yet more errands later (I was a busy bee today) I fixed myself a simple lunch.  On a bed of spinach was blackberries, kiwi, mushroom slices, and a sprinkle of paprika.  I love fruity salads.   And I also crunched on some FoodShouldTasteGood Chocolate chips.

There was some more chocolate consumption to follow.  Bloomsbury & Co Dark Chocolate, so good.

Late in the day I started fixing myself some dinner.  I tried out two new recipes!  I don’t think I was thinking things through very well though, because although each part of my dinner was delicious and successful by itself, the three dishes didn’t go very well together.  But then I just ate eat part one after another, problem solved :-).

First I baked up some Sweet Beet and Green Bean Garlic Foccacia Bread. I cut the recipe in half, used whole wheat flour instead of white, and italian herbs instead of all the ones listed. It’s a tasty bread, but I wish I had added EVEN MORE garlic. And my garlic cloves sort of disintegrated when I mixed them in so my bread doesn’t look as pretty.

Second, I took my first stab at homemade seitan, and I’m pleased to report a success. I used Vegan Dad’s recipe for Homemade Sausages, but switched the seasoning. I subbed kidney beans for the pintos, applesauce and salt for the soy sauce, and nutmeg, thyme, sage and pepper for the herbage. I was really pleased with the results, but next time I should add some chopped apple too for more apply flavour, and maybe some maple syrup. it seems like an awesome base recipe for many different types of seitan.

The third thing on my plate is a pile of cauliflower pureed with paprika and nutritional yeast. I’m liking the nutritional yeast, I just bought for the first time today for the sausages.

Obviously I also wasn’t paying attention to how un-colourful everything would be put together on the plate. At least I didn’t use the white one! And I went back for seconds of the foccacia.

Crunch time March 20, 2009

So I tend to not get anywhere close to my 6-7 servings of grains per day, but today was an exception.

I started out with a giant cereal bowl for breakfast.  In the mix is Nature’s Path Kamut Puffs, All Bran, Alpen cereal, a banana, and a few pumpkin seeds and cashew pieces, all sitting in unsweetened vanilla almond breeze.

Later in the morning I dug into a golden delicious apple, a blood orange, and a nice ripe kiwi.

For lunch there was a huge container of steamed broccoli, grape tomatoes, and an enormous carrot, along with ample amounts of hummus for dipping.

On my way home from work I snacked on an Espresso Cocoa Crunch Elevate Me! bar.  It was okay.  I’m not a huge fan of coffee anyway, but I don’t think the coffee beans worked very well with all the sweet fruit, it was rather odd.  But the bar kept me full while I went on a grand grocery expedition which was extended by a few blocks of detour when a street closed for construction over the weekend between the time I entered a grocery store, and when I exited the store in  the generally pedestrian unfriendly area under a freeway.

I got home not too long ago, and plan on going to bed soon.  I’m not very hungry, but know I should eat something, so I’m digging into a bowl containing the last bits of two boxes of Kashi cereal, GoLean and Honey Almond Flax.  Crunch, crunch….

At least I managed to clear 3 boxes/bags off the shelf!  I finished the kamut puffs too…I’m starting to need new cereal…
