Steamy Creamy Kaboch-y June 7, 2009

So last night I had some breakfat/dinner after a few hours of evening napping before heading to work.  I experimented a bit with my greens and found some beets greens in the freezer which I used to make pancakes.  I used the same recipe from last weekend but subbed ~ 2/3 cup thawed beet greens for the other veggies. I think I used an extra T of cornmeal too, because I didn’t bother looking up my own recipe, and it was too long ago now for me to clearly remember what I did last night. This new combo turned out really well, especially topped with a mixture of yogurt and black bean dip. And on the side was a Devil Dawg patty and about twice the number of strawberries that made it onto the plate.

When I got home in the morning I was starving, so I finished off the strawberries topped with yogurt and some freeze-dried strawberry filled granola I found in a bulk bin. Then I had another bowl of just the granola because I was hungry and tired and too lazy to get up and get something else.

After a badly needed shower and doing laundry (subway tunnels are dirty, dirty places) I napped for a bit and woke up hungry again, so I finished off the granola, then discovered a fantastic flavour combination in a half a pita spread with hemp seed butter and homemade strawberry jam.

That snack held me over nicely until a more reasonable dinner hour when I set my steamer to work again on a pile of kabocha and broccoli. Plus I stirfried some shitake mushrooms and snow peas in a bit of soy sauce. Kabocha is GOOD. I also think it may also be what my dad actually planted the year the buttercup squashes were tastier then usual. I’ve already requested collards greens for the garden this year, now I’ll need to see if there’s still time to plant kabocha!

I dare you to pass by Saturn peaches in the grocery store and NOT buy them! The pits are so tiny, peanut sized!

Dippity-Do-Dah May 18, 2009

It was a dippity-do-day. And a wonderful lounge-y day.

This morning I leisurely made a batch of Raspberry Cornmeal Pancakes from ED&BV for my roomie and I, and we both loved them. They were especially good topped with his uncle’s maple syrup

For lunch I whipped up the first dip of the day, and made up citrus bean dip. It contained the dredges of my bags of chickpeas, kidney beans, and a few pintos to up the volume (~1.5 cups total after cooking). Then I added the juice of 4 sad little limes that have been drying up on the counter, and a pathetic looking orange that might have started growing a little bit of fuzz on the outside, plus a handful of thyme, a bit of sage, and a sprig of rosemary (that wasn’t large enough to actually taste). It turned out to be a pretty good dip. I scooped it up with red and yellow pepper strips, carrot, cucumber, and steamed broccoli. And lunch dessert was a side of honeydew melon.

In the afternoon I snacked on a couple of the best tasting yogurts ever (that I’ve tried so far, having no access to crazy american brands). And I ended up eating the last two pancakes leftover from breakfast too, reheated in the toaster (but no repeat pic).

The pancakes might have ruined my appetite for dinner a little, so I just sat down to a plate of steamed cauliflower and a tomato paired with dip number two of the day. A mashed avocado mixed with lemon juice and some massamun curry paste, deliciously creamy.

And now I need to pack a lunch and head to bed soon so I can get up EARLY to go to a training session that will allow me to wander around subway tunnels without getting electrocuted by the third rail 🙂

 

Good Friday Indeed April 10, 2009

Well I ‘ve enjoyed my day off, and now there’s still a whole weekend to come!  I did some very useful and fun things today, namely shopping for a spring coat and some shirts that actually fit.  All of which I got excellent deals for :-), a coat and 3 nice shirts for <100$, thank you Winners.

The day started off with something I haven’t made in seemingly forever, pancakes!  I started off with a package of Multigrain Instant oatmeal, then mixed it in the food processor with 3 egg whites, 2 tbsp unsweetened vanilla almond breeze, a little (maybe 1/2 tsp) baking powder, and after mixing, a handful of raisins.

I topped the pancakes with some peanut butter and more raisins.  Then after a few bits I felt something was missing, and I realized there was nothing sweet in the mix, so I sprinkled the plate with ~1/2 tbsp sucanat, and the problem was solved.  The pancakes were nice a fluffy though, which was a pleasant surprise since I kinda made the recipe up since I was too lazy to turn on my computer and search for an actual pancake recipe of this type, and I didn’t remember the recipe I used to use, and don’t have any cottage cheese anyways.

I took lunch with me shopping.  It was simple and Kettle Corn Probar and a fuji apple.  Not a fan of the Kettle Corn flavour…I think it might have been the fennel seed that did it, never was a fan.  It was edible, and I ate the whole bar, but I think they could do with losing a few of the herbs on the ingredients list, namely the fennel and fenugreek.  Actually, now that I look it up, it might have been the epazote leaf that I’ve never heard of before and may have discovered I object to…..  At least the corn kernels were fun.

On may way home I stopped by Starbucks to redeem a free drink from filling out an online survey.  An invitation to take the survey is printed on random receipts, and when people leave their receipts with the survey printed on them at the till, the roomie brings them home to me, and sometimes I actually fill them out 🙂  It was a non-fat iced latte that I sweetened with stevia when I got home.

For dinner I was feeling a lack of colour so far in the day so I fixed up a plate of crunchy veggies.  I had asparagus, snow peas, a carrot, red pepper, and celery.

I worked through that plate while waiting for the oven to produce these crispy sweet potato fries.  I made them with olive oil, dried thyme, parsley, sage and (herby, not red salty) poultry seasoning…because we’re out of italian herbs (the HORROR, we go through bags of the stuff).  And I enjoyed the fries with a drizzle of ketchup, and the rest of my cashew fruit juice.
