Nutty Snacks June 1, 2009

It was a dark and cloudy start to the week. At least until after I took pictures of my lunch. The sun was starting to come out by the time I had thrown together some breakfast. In the bowl is Allbran, Dorset Fruits, Nuts and Seeds Cereal, and soy milk. And on the side are some wonderfully sweet cherries (love!).

For lunch I chopped up a giant salad. There was spring mix topped with carrot, cucumber, zucchini, red pepper, black beans, asparagus, and BBBV.

Plus there were snacks, yogurt with blackberries, blueberries, raspberries, and walnuts.

And later a Ruth’s Lemon Hazelnut bar. I think this is one of my all time favourite bars, love the crunchy nuts.  Although, I’m perfectly willing to give new bars a try, especially Fullbars, if I win them in Krista’s Contest!

For dinner I went a simple and protein filled route. I found some ground turkey in the freezer and turned it into a burger wrapped in a tortilla with spring mix, lots of pickles, ketchup, and mustard. And there were a couple of medjool dates stuffed with sunflower seed butter for dessert which escaped the camera.

I did see something that made me a little happy today though. Today a city-wide mandatory 5 cent fee for plastic bags came into effect. I walk by a grocery store just outside the exit from the subway on my way home from work, and today there were quite a few people stuffing items into their purses or carrying boxes and bottles in their hands. I mean, do you really need a second bag to carry a sleeve of bagels?  It made me happy that the fee was actually working to make them save the plastic instead of taking the convenient route and taking the bag. It doesn’t effect me because I already grocery shop with my reusable bag anyways (or stick things in my shoulder bag). Now I just hope everybody doesn’t start amassing huge collections of the heavier bags that don’t really end up saving much plastic. I only need two, and already rarely use the second one, because that’s the number of hands I have anyways.

My Lucky Day April 2, 2009

I got an awesome surprise today when I found out I won the cake giveaway over at Diet, Desserts and Dogs. So expect to see some chocolatey goodness here in the near future. Thank you Ricki!

My breakfast was a happy accident discovery. I’ve been wanting to try out blended oats, but me roomie is always asleep when I get up and have breakfast in the morning. So I figured I would try blending the oats at night, then microwaving the mix in the morning. I also had the rest of the tofu left over from last night’s scramble. So into the bowl went 1/4 cup rolled oats, 200 g soft tofu, ~1/4 cup of almond breeze, and a stick blender. Then I was smart enough to taste it before sticking it in the fridge. I discovered a lovely vanilla pudding texture/flavour with a bit of tofu aftertaste I wasn’t entirely happy with. So I blended in a small banana and created a deliciously creamy, no-cook, vegan banana pudding! I think it’s even more instant than pudding mixes because you don’t have to wait for it to set.

This morning I added some walnuts and dried cranberries and feasted. I was a bit amused at the colouring though. Since it spent the night (covered) in the fridge, the banana caused the top couple of millimeters of pudding to oxidize brown, but it still tasted the same, and the texture was the same as when I first blended it, so refrigeration is definitely not necessary.

My lunch at work was a container full of veggies and a seitan sausage. There was celery, carrot, red and yellow pepper, and cucumber.

And in the afternoon I snacked on fruit, lots of it, I needed two containers to hold it all. There was a pear, a mandora tangerine (horribly sour, I didn’t finish it), kiwi, blackberries, and tuscan melon.

And on the way home I munched on the rest of the Cocoa Coconut Cluster Elevate Me! bar, without taking a picture of it.

For dinner I fixed up an enormous salad filled with an entire romaine heart, zucchini, and red bell pepper.  I also seared the last seitan burger (there’s still 1 sausage) in a pan with olive oil, then added the juice from the other sour tangerine, and let it reduce to use as salad dressing.  Delicious.

And dessert was a handful of walnuts, pecans, cashews, and maple almonds.  Now I’m going to relax with the new Clean Eating that showed up in the mail box.  A lucky day indeed.

Skule Nite! March 21, 2009

Today was a good fun and laughs with friends kind of day.

I started out with a big fruity breakfast bowl of oat bran.  I cooked the bran in Celestial Seasonings Contry Peach Passion Tea with a banana, then topped the bowl with dried cherries, a medjool date, a few walnuts, and some pistachios.  Delicious.

I also drank the rest of the peach tea, and some earl grey, with a variety of dishes.

I spent the afternoon seeing Skule Nite with friends, which is an awesomely hilarious musical/sketch comedy show put on every year by UofT engineers (and others) about engineering life and pop culture in general.

Before I left, I wasn’t hungry for lunch but I knew dinner was a long way off so I snacked on a carrot covered in tasty sunflower seed butter.

I also grabbed an Apple Pie Larabar to have at intermission.  I found a Larabar flavour I like, in fact I really like it!  I’m a sucker for sales, and I think the issues I had with the larabars I had tried before were that the flavours were too simple, I could get the same effect with a date and few nuts.  So when I saw them on sale a while ago I decided to give them one more chance, and bought a handful of bars with more unique flavours and spicing in them than the cashew cookie and banana bread I had tried before.  Apple Pie = a success.  There will be more to come.

We headed out to dinner after the show at Vegetarian Haven. I got the grilled seitan burger, it was delicious and enormous!  Here’s a picture of the half of the burger I took home.  The patty is about an inch thick, I plan to cut it half and make a whole new burger out of it.  The burger is on a nice herby bun with alfalfa sprouts, lettuce, cucumber, tomato, and grilled eggplant, peppers and zucchini.  And it came with a side salad topped with raw peppers, zucchini, mushrooms, and a very fragrant rosemary olive oil vinagrette.  There were also blue corn tortilla chips (which hid at the bottom of the box), but I don’t really like those.

It felt odd but good getting a lot of compliments today.  I saw a lot of people who haven’t seen me since the end of last school year (aka about 90 pounds ago) and I got a few “Wow, you lot good”s.  I’ve never really been complimented on how I look before, and especially coming from a bunch of 21/2/3 year olds who don’t normally talk about anyone’s weight/appearance, it was a nice feeling.  I have started getting comments from the secretaries at work, but they go about it like they’re looking more for advice, and always seem disappointed that I don’t offer a quick faddy fix, just excersize and counting calories.  It just feels different coming for someone you’re own age (guys even) than someone 20 years older, I kinda like it.

 

Ice Cream Inspiration March 17, 2009

This morning my bowl of oats got a flavour treatment borrowed from Ben and Jerry’s.  Chunky Monkey oat bran.  The oat bran was microwaved with unsweetened vanilla almond breeze, then I added a mashed banana, walnuts, and chocolate chips.  Delicious.

For lunch I had a massive stirfry with red cabbage, carrot, broccoli slaw, button mushrooms, enoki mushrooms, onion, lemon juice, teriyaki soy sauce, and sesame oil.

I topped the stirfry with a bit of chicken breast.  When I took this out for lunch, EVERYTHING was purple, even the bottom of the chicken.  But it still tasted good.

Throughout the afternoon I snacked on a juicy grapefruit, a d’anjou pear, and sweet strawberries.

The weather was beautiful out this afternoon, so I only took the subway partway home and walked the rest.  When I got to my apartment I was good and hungry for my dinner, an enormous romaine salad topped with yellow pepper, purple carrot, cucumber, pickled beet, sweet potato, vintage reserve cheddar, chicken breast, and orange juice dressing.

And for dessert I had the last slice of strawberry pie.  I’m a bit sad to see it go.

All Day Breakfast March 13, 2009

This wonderful morning start off with delightful CHOCOLATE! I had a bowl of oat bran made with unsweetened chocolate almond breeze, a spoonful of mascarpone ice cream, and topping with crunchy chia seeds and walnuts.

I also had a Kashi Trail Mix bar later in the afternoon.

For dinner I was craving breakfast food, so I whipped up a fluffly omlette using 1 egg and 3 whites, topped with some parmesan cheese. And I filled the plate with strawberries, sweet fresh figs, and a kiwi.

And dessert was more fruity breakfast! A sliced banana topped with Kashi Honey Almond Flax cereal, dried cranberries, and the last of the chocolate almond breeze. I should go get some more of that stuff, it is very tasty.

Perhaps a bit premature… February 26, 2009

Summer is coming!

OK, not quite yet, we can work on spring first, but my breakfast tasted like summer, even if that flavour came via Florida.  And then when I went outside for work there was virtually no snow to be seen!  It had almost all melted, and it was above zero even though the sun had just come out.  Up where I work there was still snow.  In fact, it looked like it had snowed overnight, though it was starting to melt too…but that’s a different story…

My summer bowl of steel cut oats was mashed with a large helping of heated strawberries, and topped with goat cheese, flaxseed, and walnuts.  I’m really liking the goat cheese and something sweet oatmeal topping combination.

I spent most of my day a work doing some serious engineering work which consisted primarily of photoshopping a bunch of images to match drawings I had in front of me but we can’t use because we’re required to make our own, identical versions.  Oh well, someone has to do it, and I am the student…

Lunch was a container of sauteed asparagus, pork tenderloin, onions, and mushrooms with balsamic vinegar.  There was also a sliced carrot involved, as well as a giant whole wheat matzo cracker.

Tonight I was in a weird food mood, I was hungry but didn’t want to eat or cook anything in particular.  Coupled with the fact that the fridge is looking rather barren, I ended up with a giant red leaf lettuce salad tossed with goddess dressing, and topped with grapes, corn, and the last of the pork tenderloin.  The corn and grape combination, though admitted odd, actually ended up being really good with the dressing.

And finally, dessert was half a Cashew Cookie Larabar and a couple pieces of dried mango.  I’ve only had the banana cookie and chocolate mint Larabars before and wasn’t impressed with either, but I had stopped off to pick up some (sale!) Almond Breeze on the way home and this bar was marked down because it’ll expire soon, so I decided to give a nutty flavour a try.  It was pretty good, a bit dry for my tastes (though that could be because it’s old?).  I think it’ll make a good topping for tomorrows oats.  Overall, I don’t think I’m horribly enthusiastic about Larabars in general, but I’m not likely to say no it offered one.  For now I’d rather spend my money on other things.  Though I would like to try making my own, I do have a container of dates and lots of nuts and dried fruit in my cupboards….
